Pumpkin or Winter Squash Pie

Ingredients
1 1/2 cups pumpkin or winter squash cooked and mashed until smooth.
3/4 cup sugar
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cloves
3 slightly beaten eggs
1 1/4 cups milk
1 6-ounce can (2/3 cup) evaporated milk
1 9-inch unbaked pastry shell
Directions
Cook the squash or pumpkin until tender. Remove the skin and blend until smooth. Use a blender to make smooth winter squash or pumpkin filling.
Preheat the oven to 400 degrees. Combine pumpkin, sugar, salt, and spices. Blend in eggs, milk and evaporated milk. Pour into pastry shell. Have the edges crimped high because the filling amount is generous. Bake in hot oven, 400 degrees, for 50 minutes or till knife inserted halfway between center and edge comes out clean. Cool.
