Bok Choi Stir Fry

Ingredients
1 tbsp Peanut Oil
1 Red Bell Pepper, julienned
1 Green Bell Pepper, julienned
1 Onion, chopped
1-cup Mustard, chopped
2 tsp Grated Fresh Ginger
Pinch of Salt and Pepper
1 Head Bok Choy, chopped
3 tbsp Soy Sauce
Directions
Heat oil in wok or deep skillet. Stir-fry peppers, onion, ginger, salt and pepper. Add Bok Choy and soy sauce, cook 2 minutes.
Also good with Collards, Broccoli, Cauliflower, Chinese Cabbage
