Celeriac Salad (Sellerie Salet)

Ingredients
3-4 Celeriac Bulbs
1 TBS. Canola or Sunflower Oil
2 Tsp White Vinegar
2 TBS. Yogurt
salt and pepper
2 TBS. Minced Parsley
Directions
Boil the roots until tender about 25 minutes. Shock with cold water and peel. Cut into 1/2 and then into thin pieces. Mix vinaigrette with celeriac pieces. Let stand over night for best taste.
